Suzhou苏州

Suzhou has over 2,500 years of urban history and stands as one of the wellsprings of Jiangnan culture, long known as "heaven on earth." In 1997, UNESCO listed the Classical Gardens of Suzhou — led by Zhuozheng Yuan (Humble Administrator's Garden), Liu Yuan, Wangshi Yuan and Huanxiu Shanzhuang. In 2000, five more gardens — Canglang Ting, Shizi Lin, Yi Pu, Ou Yuan and Tuisi Yuan — were added as an extension. Add the Grand Canal's Suzhou section and the Pingjiang historic district, first recorded on a Southern Song city map, and Suzhou holds several UNESCO designations at once. It's also home to Suzhou embroidery, kesi silk tapestry, pingtan storytelling and Kunqu opera — Kunqu was the first item China ever had inscribed on UNESCO's Representative List of Intangible Cultural Heritage, in 2001. Today's Suzhou is more than a garden museum: the Suzhou Industrial Park hosts over 5,000 foreign-invested companies, and the area around Jinji Lake has one of the Yangtze Delta's densest expat populations. The classical and the contemporary each keep to their own turf, without crowding each other.

Canal Old Town

Pingjiang Road and Shantang Street — a water town that's still lived in

• Pingjiang Road appears on a Southern Song city map and is one of Suzhou's best-preserved historic districts — also a heritage point along the Suzhou stretch of the Grand Canal
• Shantang Street dates to the Tang dynasty; local lore credits poet Bai Juyi with dredging its canal — "seven li of Shantang to Tiger Hill"
• Wooden canal boats, pingtan teahouses and Kunqu venues sit tucked along the waterside lanes — the most direct way to feel Suzhou's rhythm
• Guanqian Street, the old town's other historic shopping street, is where the century-old pastry shops cluster

Food & Flavor

A cuisine sweet enough to define a city

• Squirrel-shaped mandarin fish: crisp outside, tender inside, sweet-and-sour — Suzhou cuisine's signature dish
• Suzhou-style noodle soup: broth-forward with a generous topping — fengzhen white broth and fried-fish noodles are the classics; old-timers insist on the dawn "first-broth" bowl
• Yangcheng Lake hairy crab: golden claws, yellow fur, the catch opens in late September — autumn is Suzhou's biggest food season
